Both require a process, inspiration, and a narrative. Equally important is understanding the restaurant from an operations perspective: how do servers move around, where is the entrance to the kitchen, where are the waiter stations, how are they designed? If the service cannot function flawlessly it does not matter how beautiful the restaurant is.

SG : All of the bars and seating elements were made from repurposed wine boxes, inserts, and pulps. The idea was that the bar could literally pop up and then collapse to be stored away. Since MAD is a museum focusing on materiality and process, our design insertion was a perfect fit. Each week we had a guest chef from one of the top restaurants in New York prepare food to which Crush Wine and Spirits paired an incredible wine selection.

Where did you go to college, and what was one of your greatest lessons learned? Cornell University School of Architecture opened my eyes, showed me how to see, and taught me how to bring an idea to life through a critical process. Any lessons learned there? Why and how did you start your namesake firm? I always thought that one day I would have my own firm.

It will be ten years next year. What was your first reality check after opening it? Balancing the business with the creative. Building my practice has been my MBA. How big have you grown? We are a boutique firm with a big vision. The size is that of one studio in a larger office. I love the intimacy and opportunity to have time to collaborate with each team member and each client.

Being in the context of a hotel, it was important to understand the different functions required of the space together with the vision of the brand. At the Westin it was particularly critical for us to infuse their natural and holistic approach together with a space that could transform from day to evening.

Perhaps we have become too comfortable in creating typical office spaces and we need to have a more reduced approach where things are not as permanent.

As we rethink office spaces, the question I ask is: What is essential for you? Is a desk essential? Is a lounge space essential? Is that coffee bar still in play? Or is it more about not defining the space as one thing and allowing the daily rituals to tell the story? In our studio, the stainless steel monoblock island we have as the centerpiece of the kitchen is a beautiful object, it can be used as a Champagne bar and a sushi counter, but it's also a place where you can have an intimate discussion and sketch out an idea.

It is where I gather with my team to share tea. My mantra is not to give functions to every single thing, but allow them to define themselves as you move around and use the space. Your space is going to make a lot of people jealous. When is your lease up? Where does this story start? How did the landlord respond? It will be home base for a long time.
